The Oil

We have 5,000 Tuscan olive trees on our property in Paso Robles, California where we closely monitor the care and handling of the olives.   We planted a combination of some of the most desirable Tuscan olive oil producing varieties such as Frantoio, Leccino, Maurino, Moraiolo and Pendolino which we believe produce the best oil when blended together.   Our trees are minimally handled throughout the year with just one pruning to "lift their skirts" and a light application of an organic solution to repel insects.
